I had had the pleasure of staying home allday so I decided to cook one of my all time favorites. Lately I’ve been avoiding my kitchen, this mommy has been DRAINED. After an early morning trip to the grocery with my 3 brats and my skipping breakfast boy was I hungry. Going grocery shopping on an empty stomach is quite dangerous to the pockets but this meal is affordable thank goodness.
Your favorite seasonings
Your Choice of Cheese
First I add Olive Oil to my skillet and let it get hot. Once I hear the sizzle I add the sausage.
When the sausage starts to brown I add the shrimp to the middle of the skillet.
This is where you add seasoning. I used blackened seasoning, black pepper, salt and red pepper flakes.
When the shrimp starts to turn pink I add the diced tomatoes. Let that simmer about 5 minutes to let all the juices mix.
Next I add cream and chicken broth. Not a ton to make it soupy but just enough because you want it to have a nice sauce…I’m sorry I don’t measure 🤷🏽♀️ this is a real mom in the kitchen and I just make it work.
Let it simmer uncovered until it’s the consistency you want. If you like you can add a little flour to thicken if you accidentally used too much cream or broth.
While all that simmers let’s pat ourselves on the back for not burning down the kitchen as we juggle kiddos and cooking. Next we are onto the Grits. I use Quick Grits but you can use instant if you’re afraid of Quick Grits. Mine are all cooked so it’s time to embellish them!
I add cream, butter, shredded cheese and black pepper. Use any cheese you like. Sometimes I like to use pepper jack but today I’m using Colby Jack. I am a die hard southernbelle as most of you know, I hear some people put sugar in their Grits! That is an absolute no in my kitchen.
Now that everything is done it’s time to slap it in a bowl and eat! This is my first meal of the day #Sigh I never have time to eat breakfast so you can imagine how hungry I am. I hope you enjoy and don’t forget to follow me on Snap Chat! @TheHouseOfSam
